At 11:50 mins when you select the loop by double clicking it didn't do anything for me. i had to google it and its alt + left click and even more googling led me to Emulate 3 button Mouse which finally allowed me to double click to select the loop.

 Now that we’re a bit more familiar with Blender, I’ll begin to show you how to use its many tools to model some basic shapes, culminating in the most visually simple chess piece-- the pawn.

Normals are not where they should be. I found them by adding a modifier , but the function doesn't work properly. Any figure that part out?

So, I had to look this up-- in fact I just finished part 2 and have had to look up at a lot of things purely because he's working on an older version and (as you pointed out) things aren't where they should be/work how they did for him. The answer to your question is: If you right click and hit Shade Auto Smooth on your Mesh, it pulls up the exact same modifier slider that Normals did. I can't find concrete evidence as I don't have much Blender knowledge, but it seems like this key has replaced what WAS the Normals tab.

When I scale in after moving my line it works but there is another cylinder layer that remains. no idea why

This is so hard to follow. Say what you are DOING. What buttons you are pressing not what they do. holy crap this is frustrating.

Lenend. It was just alt+left click once for me on mac. Might depend on the keyboard you are using as well. I am using a cheap $11 logitech keyboard.

I was having the same problem. I was clicking on each individual one point and it was taking forever. Thanks for sharing that. Actually for me on Mac it was shit alt left click a few times in different spots on the ring and it works !
